  4. Subject: LACTO: Scalloped Potatoes

  6. I know this has onions in it but I think you'll like it:

  8. 4 Medium Russets, Peeled and sliced thinly
  9. 1 medium onion, chopped
  10. 2 Tbl Butter
  11. 1/2 Pint cream or half 'n half 
  12. 1/2 Lb cheddar, grated
  13. 3 Tbls flour 
  14.  
  15. Saute onion in butter until golden. Add cream and boil until thickened
  16. to the point where it coats a spoon. Remove sauce from heat and add two
  17. large handfuls of cheese and stir until melted. Put 1/3 of potatoes
  18. into a casserole in a layer. Pour 1/3 of sauce over potatoes and
  19. sprinkle a tbl of flour over it. Repeat layer of potatoes, sauce, and
  20. flour two times.  Bake for about 55 minutes at 350 degrees or until
  21. potatoes seem tender.  top dish with a generous amount of cheese and
  22. return to oven until melted and slightly browned
